Metric (international)

Ingredients

Scale

450 glocally grown garlic, peeled
1 teaspoonfine sea salt
1 teaspoonunrefined raw sugar
approx. 500 ml apple cider vinegar (to cover)
a few sprigs fresh thyme
1-2 leaves fresh or dried bay leaves
approx. 200 ml extra virgin olive oil (to cover)

Method

Steps

Check off steps as you go — timers run automatically in cook mode.

Combine

Place peeled garlic, salt and sugar into a medium saucepan and pour over just enough apple cider vinegar to cover.

Cook

Bring up to the boil and cook for 2–3 minutes or until the garlic is just tender but still firm.

Drain

Drain well (reserve the vinegar, cool it and use it in dressings etc), and pat the garlic dry on paper towels.

Pack

Pack into a large sterilised glass jar (or a few smaller ones), add thyme sprigs and bay leaves, and top up with extra virgin olive oil to cover completely.

Store

Seal and store in the fridge for up to 2–3 months.

Use Oil

Use the leftover garlic-infused olive oil for dressings.
